You can use frozen peaches if that is all you have on hand. We also love the cobbler topping on this recipe, it has a wonderful flavor and is perfect with ice cream.

• 5 cups fresh peaches peeled and sliced
• 2 tablespoons cornstarch
• 3/4 cup brown sugar
• 1/2 cup water
• 2 tablespoons butter or margarine
• 2 tablespoons lemon juice

TOPPING:

• 3/4 cup all-purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1/2 cup sugar
• 3 tablespoons butter or margarine melted
• 1 egg
• 5 tablespoons milk

• Mix together cornstarch, brown sugar, water, butter and lemon juice.  Add peaches.  Cook in a saucepan on top of the stove until thickened.  Pour into a round 2 quart baking dish that has been sprayed with cooking spray.
