Million Dollar Rice Salad is a good salad for potluck meals, church gatherings, and picnics. This salad is great in summer or winter and for any holiday meal. My family loves it. This recipe makes a lot. It keeps well in the refrigerator and the recipe could be cut in half or even doubled for a large group or event. You can make this a day in advance too, which is always nice!
How Much Rice?
This recipe is made with 2 cups of uncooked rice. Once you cook it that will equal 4 cups of rice, so it makes a large salad. You could easily cut this recipe in half for a smaller salad. We use minute rice in this salad, but you could easily just use regular grain rice, make two cups.

Million Dollar Rice Salad
Million Dollar Rice Salad is a creamy, old-fashioned favorite loaded with delicious flavor. This easy vintage recipe is perfect for holidays and gatherings.
- 1 8 ounce package cream cheese, softened
- 1 1/2 tablespoons white granulated sugar
- 1 tablespoon mayonnaise or Miracle Whip
- 2 cups uncooked rice cooked (I use instant rice but could use any kind)
- 1/2 cup maraschino cherry halves about 15 whole cherries cut in half
- 1 20 ounce can crushed pineapple, drained
- 1 11 ounce can mandarin oranges, drained
- 2 cups miniature marshmallows
- 1 cup heavy whipping cream whipped or can use cool whip
- 1/2 cup chopped nuts walnuts or pecans

Mix together cream cheese, sugar and mayonnaise with mixer. Fold in cooked rice, cherry halves, pineapple, oranges and marshmallows. Add nuts. Mix with a spoon.

Whip the cream with mixer until looks like cool whip and mix into the salad with a spoon. Refrigerate for at least 2 hours before serving.

Makes 8 to 10 cups of salad. Enjoy!Note: You can add about any kind of fruit to this salad such as grapes or bananas.
