Why You’ll Love This Impossible Chicken Pie
When you need a quick and delicious dinner this is the recipe you will go to! It’s made with super simple ingredients, loaded with flavor and easy to throw together. You can even use frozen chicken to save time. It’s super versatile too and you can switch up the ingredients. This chicken pie is prepped in less than 15 minutes and in the oven!
Swaps or Additions
You can switch out the cheese! We love cheddar so it was perfect but you can use any cheese you prefer. You can use frozen roasted chicken. We have made it that way and it was great. Not a fan of broccoli, you can leave it out. We like to use bisquick but you can always make your own baking mix.
What is an Impossible Pie?
An impossible pie is made with a baking mix and it makes it’s own crust. So when you make an Impossible Pie, it slices just like a real pie, but you didn’t use a pie crust.
Can You Freeze This Recipe?
We have not tried to freeze this, but see no reason why you couldn’t. It would be a super easy recipe to make and freeze half or all of it. I think it would keep about 3 months in the freezer.

Impossible Chicken Pie
This Cheddar Impossible Chicken Pie is an easy, cheesy, old-fashioned dinner recipe! Simple to make, delicious, and perfect for busy weeknights.
- 1 1/2 cups cooked chicken cubed
- 2 cups cheddar cheese shredded
- 1 12 ounce package frozen chopped broccoli, thawed and drained
- 1/2 of a medium onion chopped
- 1 1/4 cups milk I used 2%
- 3 eggs
- 1/4 cup biscuit baking mix I used Bisquick
- 1 teaspoon salt can use more or less
- 1/2 teaspoon black pepper can use more or less
- Extra shredded cheddar cheese for top of pie optional (I used about 1/2 cup on top)
-
Combine the chicken, cheese, broccoli and onion in a bowl. Spread in a sprayed 9 or 10 inch pie pan.
-
In another bowl using a mixer, beat together the milk, eggs, baking mix, salt and pepper.
-
Pour this mixture over the chicken in the pie plate.
-
Bake in a preheated 400 degree oven for 40 to 45 minutes until center tests done.
-
Remove from oven and sprinkle on extra cheese. Let stand until melted or return to oven for about five more minutes.
-
Makes about six to eight servings.
If using a nine inch pie plate, you might want to put a baking sheet under the plate in case pie should run over a little in the oven. I used a nine inch and mine did not run over but I used the baking sheet just to be on the safe side.
