Why You’ll Love These Mississippi Delta Bars
If you love a bar that starts with a cake bottom, a gooey center, and a crispy top, these are for you. I will say we saw a few recipes where these were made in a 9X13 and thin, but we wanted to try to make them thicker and in a 9X9 and these turned out fantastic. We were all shocked at how good these are.
Some people say..
I read that the original recipe came from a Betty Crocker cookbook, and others say these are very similar to Mud Hen Bars. I am not really sure the origin, we pulled a few recipes and then made this our own. We wanted a thicker bar and one that was made in a 9X9 and we thought this was great!
Are they supposed to be gooey?
Yes, these bars have a cake-like bottom, and then a gooey center, and the top is crisp. It’s really wild how these bars are set up, and you do want the center to be gooey; that is what makes them so good. They can be slightly messy and a little difficult to remove from the pan. You can use parchment paper for easy removal if you like.

Mississippi Delta Bars
If you love a bar with a cake bottom, gooey center and a crisp top, save this delicious recipe!
- 1 stick or 8 tablespoons or 1/2 cup salted butter softened
- 2 egg yolks save the whites separate for use in topping
- 1/2 cup milk I used 2%
- 1 cup white granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup chocolate chips
Topping Ingredients
- 3 egg whites
- 1/2 cup brown sugar
- 3/4 cup of chopped pecans

Spray an 8×8 or 9×9 baking dish with cooking spray. In a bowl add butter, egg yolks, milk, white sugar and vanilla extract. Mix with mixer.

In another bowl whisk together flour and baking powder. Combine the two and mix. Batter will be thick.

Add the chocolate chips with a spoon. Spread batter in baking dish.
Topping Instructions

For the topping mix the egg whites in a bowl with mixer until starts to thicken.

Mix in brown sugar and beat until peaks form and fold in nuts. Spread over the base mixture.

Bake in preheated 325 degree oven 40 minutes. Let cool before cutting. Makes approximately 9 bars.
These bars will have a gooey layer underneath the crispy top and then a cake-like bottom.
